Your Weekly Dose of Cooking

 Good Evening Fellow Bloggers and Blog Readers! Today has been a roller coaster of a day. I babysat a sweet little girl all while my back is in inscrutating pain. I don't have medical insurance, not since my ex-husband got out of the military (I do miss those medical benefits, I don't miss him though.) Anyways.... I have been busy with temporary nanny/babysitting positions and relaxing. I have been really working on my cross stitch project (I won't post pictures until it is all done), and I have been reading like there is no tomorrow. Well my good and faithful boyfriend wanted to have homemade macaroni for some time now and I haven't had the energy or time to make it. So since I had some time off I made him some. It was the first time ever, for me, to make it. It turned pretty good. So here it is for you all. My little group of faithful followers.  



This is what my finished product looked like!

Stove Top Macaroni and Cheese

Ingredients:

1/2 pound elbow macaroni
4 tablespoons butter
2 eggs
6 oz. evaporated milk
1/2 teaspoon hot sauce
1 teaspoon kosher salt
Fresh black pepper
3/4 teaspoon dry mustard
10 oz sharp cheddar, shredded

Directions:
  • In a large pot of boiling, salted water cook the pasta to aldente and drain.
  • Return to the pot and melt in the butter. Toss to coat
  • Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. 
  • Stir into the pasta and add the cheese
  • Over low heat continue to stir for 3 minutes or until creamy
This dish was delicious. You could add chili to it or ham. Or serve it with your favorite meat.
